At Rascal, we love the rebellious attitude of Finca Gascón, whose ethos is one of constant innovation. Felipe Contreras, the mad-scientist who operates the farm, uses fermentation to explore the infinite complexity of coffee and is often collaborating with other farmers to improve both quality and processing techniques. His love for coffee is in his blood - his father Gildardo used to pick and process coffee with his own parents from a small crop in their yard, until finally fulfilling his dream of owning his own farm by purchasing Finca Gascón in 2012.
