How this coffee is made
Sustainably at the farm

Grown under the shade of Chalum, Gravilea and cedar trees — the cedros the farm is named after — and hand-picked at peak ripeness between January and April.

Washed & dried

Cherries are floated to remove defects, fermented for 24–40 hours depending on the weather, then dried slowly on raised beds and in the greenhouse — up to 20 days in the cloudy months.

Roasted in London

We roast small-batches every week on a Loring roaster in East London.

Los Cedros de Palmira, Huehuetenango, Guatemala. Grown by the Palacios family at 1,740m — Strictly Hard Bean grade, Pacamara and Maragogype varieties, hand-picked and washed. Harvest runs January to April. A limited-edition single-estate lot.
Tasting notes
Silky body and sweet, with notes of berries and chocolate and a bright citric acidity.
Brewing guide
Filter: 70g of coffee per litre of water. Espresso: 18.5g in, 37–38g out, 25–30 seconds.

What are Pacamara and Maragogype?
Two of the largest coffee bean varieties in the world — Maragogype is nicknamed the "elephant bean". Both are prized for their distinctive cup character and are rarely grown at scale.
Where is Huehuetenango?
Pronounced "whe-whe-tenango" — Guatemala's highest and driest coffee region, up against the Mexican border. It's one of only three regions in the country without volcanic soil: coffee here grows in limestone, which gives the cup its distinctive bright acidity. It's also one of the most remote — historically farmers carried their coffee out by oxen or on their backs.
What makes this limited edition?
This is a single-estate lot from the Palacios family's farm in Huehuetenango, grown at 1,740m. Quantities are small — when it's gone, it's gone.
